I would like Thunderbird to retrieve my emails automatically every couple minutes, is this possible?

Yes, but not recommended. Email providers tend to limit the interval how often checking for email is allowed. Typically the interval is 10 min. If you use IMAP you can check 'Allow immediate server notifications when new messages arrive' in your account settings, assuming your email provider supports it. This way the server will push out arriving messages to the email client immediately.
