If so and I disable spotlight, what can I use to search my computer for attachments when I'm in Thunderbird? I disabled spotlight and now when I try to search my computer for files to attach from within Thunderbird the search feature doesn't work.

Turn spotlight back on. That is your operating systems search, and the process of finding a file to attach is delegated to the operating system. The operating system supplies the dialog you see, not Thunderbird through it's application programming interface. You will find the file dialogs of just about all applications will loose the ability to search as well.

Do you have your profile stored on Dropbox? Even if you don't mind the degraded performance of such a setup, I don't think you can expect TB to search a remote storage site, like it can search an IMAP mail server.
