I updated to Thunderbird 68 & the add-ons (edit-email-subjects, header-tools-lite) to edit the subject line no longer work. Any suggestions to edit the subject line of emails I received? If not, any downsides to returning to Thunderbird 60 (a version the add-ons work with)?

Only that your profile has been modified for Thunderbird 68. So just installing Thunderbird 60 will not be enough.
