I set the downloads to where it gets removed from list as soon as it is finished downloading. I would like switch it back to default where the finished files stay on the list. When I go to tools, options, I see nothing that comes up for that. Also, How do change the number of downloads able to download at once?

If you download files from the same server then there is a maximum of persistent connections (6) to one server. It is not polite to increase that maximum because that prevents others from accessing that server and may get you banned.
