How do a create a list of people in my address book that another company can use? i have created test@pickmymedia.com in my address book - do i need to set this up as an e-mail account ? how do i add about 6 names to it though? IE I have a test e-mail list that needs to be tested by a supplier with a creative, but I dont what them to know the name of my client?

You can't just make up email addresses. For someone to use an address, it must be known to servers on the internet so they can find it. And that means going to an email provider for your test addresses.

I suggest you set up some real addresses with a free provider such as googlemail.
