How can I change Outgoing Server (SMTP)?
Swiched to another server. Changed Server Name in Server Settings. How can I change Outgoing Server (SMTP)? The old server is the only option, marked Default.

When you open the Account Settings window and click on Outgoing Server at the bottom you see your current default smtp server listed at the right, yes? And just to the right of that entry is there not a button labelled 'add'? If there is, then a) make a new entry for the new server b) set that as default c) if you wish, remove the setting for the old server

Can someone explain the ins and outs of outgoing servers? Particularly the meaning of "Default?"
My Verizon account will only accept messages coming from a Verizon server. My Yahoo account seems to work OK with the Verizon (default) server, but my Etnernal September newsgroups isn't working and doesn't seem to know that I have an account there. When I'm looking at settings for that account and click on Outgoing Server (SMTP), am I selecting the outgoing server for the account I'm looking at at the time"? Do I need to make that the default? Can (should) you have more than one default?
On the system where everything Thunderbird works correctly, no matter which account I'm looking at, when I click on "Outgoing server" the Verizon server is selected, and Eternal September, Yahoo, and Gmail all work that way.
Is there another server setup that I'm missing?
