I have four email accounts in Thunderbird. The top one and default as listed in the Folders side panel is sdean@sdean.net. When, in FFx, I invoke Email Link from the File Menu, I end up with the second listed as the From address in the Tbird email composition window that pops up. How do I configure Tbird so that sdean.net gets used and is the default.

Click Tools>Account Settings. Then highlight the desired account and in lower left sidebar, click Account Actions and from there select default. (Tip: you can also rearrange which account appears on top here by using mouse to move account up or down.)

There are a lot of defaults for various things; I missed this one. My problem is solved. It's happy making to know that some problems can be definitely solved. On to the next.
