This is an option at gmail, not Thunderbird.

Your reply suggests my full question didn't get through.

My problem is not with IMAP or 2-factor authentication. I mentioned those to let respondents know I'd dealt with both @ the Google end.

My problem - also at the Google end - is I can't find the "Allow secure apps" option that Google has had in the past. Is this a new security thing, or am I missing something?

No, it's been around for a while. See https://support.google.com/accounts/answer/6009563

Alternatively you can set 'Authentication method' to 'OAuth2' in your Thunderbird Account Settings for both, Gmail IMAP, and Gmail SMTP servers. This would avoid the 'less secure apps' setting altogether.
