For example if Thunderbird catches a new email address will it automatically show up in the address books for the other apps? Will deleting a message on one app fail to erase it on another? synchronization of mail requires that all apps use the IMAP mail protocol.

Thunderbird does not synchronize gmail address books without an add-on. See https://addons.mozilla.org/en-US/thunderbird/addon/gcontactsync/
