Is it possible to prevent Firefox (latest version V59) to exit the Fullscreen mode/ to show the other open tabs if the user clicks in the top left corner of the screen? (on a Windows Touch PC)

The only way to exit the fullscreen mode should be by pressing F11.

Is there some entry in about:config to adjust the behaviour ?

Hi, it depends on where you are. For Youtube there are 3ways to exit Full Screen Mode. From bottom menu far right, ESC, and mouse to top center for drop down to appear.

So to do what you want would disable other options I would think.
