Am trying to change the colour of visited sites in google search, but “Language and Appearance” tab is missing from “General” tab in settings.

Unfortunately the iOS implementation of Firefox is significantly more limited than the Mac OS and Windows versions of Firefox. Which is to say, there isn't a language and appearance setting option in iOS Firefox :(
The only thing you could do is submit feedback to the devs and see if they can change it (I assume most limitations of iOS FF are due to iOS, though).
