Yahoo is requiring that I remove their accounts in Thunderbird and set them up again using the automatic setup in order to comply with their new security protocol. Do I need to move the contents of the Inbox and Sent folders in that account to a local folder to preserve them before removing the account? Or can I simply disable the current account by changing the email address and then add a new account with the correct email address?

You don't have to remove the account. Change the authentication to OAuth2 on the incoming and outgoing servers, check that cookies are allowed in TB Options/Privacy, remove the passwords from Options/Security/Passwords/Saved Passwords, restart TB, and enter the account password in the OAuth browser window when prompted.
