I have deleted my `all mail' folder and now want to restore many of the emails to their original folders. Can I do this by resetting Thunderbird back a few hours - or do I ned to reset the computer to an earlier time/date?

All Mail, just like all gmail folders, are on the gmail server. Contact gmail for your options.
