I believe that Firefox synced my data as a default before I had a chance to reset my sync preferences. Why is syncing the default? Anyway... is there some way that I can get all my synced data removed from the cloud - or from wherever it is? Thanks.

When you delete your account, all your data will be deleted as well. See Mozilla account - Managing account data.

Sync is is an optional feature, not the "default".

Sync requires purposeful enrollment for a Firefox Account (FxA).
