You should be able to rename a folder by right-clicking on it and selecting Properties.

An alternative method is to open the bookmarks library (in the Bookmarks menu select Organize Bookmarks). Then in the library click on the folder to select it, you can then change the name by typing it in the name field near the bottom of the library.
