How can I setup Thunderbird to have the email preview be on the bottom of the screen instead of the right side?

≡ > View > Layout choose anything but vertical view either wide or classic will do what you want.

It is not however an email preview, it is an email reading pane which performs exactly the same as a tab or new window. Therefore don't be thinking it has some sort of security benefit over the other methods of reading mail.
