Please note, this area is still being worked on so new improvements eg: ability to auto set as visible a Cc field, are still in the pipeline. So expect better options to be forthcoming.

In the meantime, as a workaround, you could setup the Account Settings > Copies & folders - Sent section to 'Cc' your email address or if this is a business account and you always include a particular person, then enter their email address. This means when you click on 'Write' the Cc field will auto get displayed. You could delete your email address, or just leave and add what is required. Depends upon whether you are bothered by receiving a Cc to your email address.

The one thing that is much quicker regarding TO Cc or Bcc, is that once you have selected a Cc, you can enter as many email addresses as you like and you do not have to keep selecting the Cc option. You could also use the 'Contacts Sidebar' - select contact(s) and click on the 'Add to Cc' button which would auto create the Cc if it was not already selected.
