In addition to the above :

In Options => General => Under 'Languages and Appearances' you can choose your preferred language for displaying pages.


Just in case you don't know how to find Options => General :

3-bar menu (or 'Tools') => Options

Or type in the address bar : about:preferences and press Enter

Hi philpow, are you using the main google.com site or one of the country-specific sites in another language?

Google will switch your site to match your internet connection. If you want to prevent that, try this link, where ncr stands for "no country redirect":

https://www.google.com/ncr

That should set a cookie which reminds Google not to switch you. If that cookie is cleared, use the ncr link again.

If you are already on google.com, try the language preferences setting:

https://www.google.com/preferences#languages

That, too, is saved in a cookie (if you are logged in, it might also be saved in your account settings).

Hi philpow, if your question is not about Google or a website but is instead about Firefox's user interface and built-in pages, you may need to install Firefox in your preferred language. You can download a fresh installer from this page:

https://www.mozilla.org/en-US/firefox/all/

When you run that, it should detect that you are doing an "update" and retain your current settings. Of course, it doesn't hurt to do a backup just in case. See:
