when attaching a jpeg photo to an email, how can I size it so it is not HUGE?
This does not happen all the time. It did happen with photos I sent recently. Recipients cannot see the complete photo without paging down. I checked this out in my "sent" email folder.

You can use your favourite image manipulation program to downsize it. Irfanview is my favourite in Windows, The Gimp elsewhere.
If you want Thunderbird to do it for you, look for the Auto Image Resize addon.
I haven't checked it recently but the easiest thing to use might be Shrunked, another addon. It isn't as capable or flexible as the previously named addon, but is really easy to use.
