Firefox just updated itself on my office PC without asking my permission and all my bookmarks have disappeared
Just as stated. I did not authorize Firefox to update, it just did it when I opened my computer, and all the bookmarks I created over a long time have disappeared. Why has this happened? Up until now I have been very happy using Firefox but now not so sure.

Are you sure that all your bookmarks are actually gone? Or could it be that you just don't see them where you expect to see them, as in past versions? Firefox 57 received a new toolbar button for Bookmarks that shows "Recent Highlights" / "Recent Bookmarks" and "All Bookmarks" is opened via a men item at the top of that menu drop-down. That change has caught many users off guard.
Please open the Library window and select Bookmarks. then open the Bookmarks Menu folder on the left - do you see your bookmarks there? Using the keyboard - { Ctrl + Shft + B } will open the Library window.

That doesn't appear to be the problem. No matter where I click among the bookmark choices my previous bookmarks do not appear. They seem to have been deleted by Firefox with the update. I am having to re-enter all the previous bookmarks.
Also the previous version allowed me to make a custom bookmark bar horizontally across the top of my screen. Is there way to do this in the new version?
