How do i stop emails being auto saved in 'important' Emails and 'All Mail' folders?
I discovered super old emails that I would have deleted years ago still there! Id like to just have my emails in the inbox where i can then file them as I wish or delete them and then they are in the bin and not lurking in another folder! Thank you!

Sounds like you are talking about an imap gmail account.
Gmail keep all your emails both incoming and outgoing in the 'All Mail' folder. However, they understand that people like a more conventional view of emails that are organised in a way that makes it easier to see emails aka 'Folders' which gmail call 'Labels'.
When you delete emails in an imap gmail account they must go to the gmail 'Trash' folder which might be called 'Bin'. Gmail will auto empty the Trash on server every 30 days and this will also delete them from the 'All Mail' folder. If you delete and do Not put in gmail Trash folder, then gmail will only remove the 'label' and auto archive the emails in the 'All Mail' folder.
So if you delete an email from the 'All Mail' folder it would be deleted and that email would also be delete from any other folder it is in.
The 'Important' folder is a special gmail folder. You can adjust settings in the gmail webmail account under 'settings' > 'labels' to show or hide that folder and also uncheck 'Show in imap' Under Settings > Inbox > categories you can select just 'Primary' to stop categories. Under Settings > Inbox > Importance markers - select no markers. This should stop emails getting that marker and also hide that folder.
