When I delete Trash I want Thunderbird to ask for confirmation, I must have not knowing checked the do not ask again box.

You will need to do this in the Config Editor.

Click the 3 bar menu button Hover over Options and click Options when the next menu appears. Click the Advanced tab and then the General tab under Advanced. You will see the Config Editor button on the lower right. Click that and Promise to be careful. In the search box enter delete_from_trash

This should show an entry that says mail.warn_on_delete_from_trash It will be bold showing that you changed it from the default of True to False. Right click that entry and select Toggle from the menu. Close out of the editor.
