Since a Thunderbird update, my email display shows only "subject" and "date". How do I add a third column for "sender"

You need to enable the 'FROM' column header or if this is a 'Sent' folder enable the 'Recipient' column.

Far right of column headers there is an icon - if you hover over it a tooltip says 'select columns to display' click on that icon to see a drop down selection. The image I added below as a guide is from the 68* series, but the icon and location is the same and it should help you.
