I recently updated to version 68 from version 60 and now all themes are deleted. I saw that TB no longer supports themes but just wanted to colorize the icons on the toolbar. I tried different background themes but this did not help. It still displays black and white only which is harder to read. See the attached screenshots. Any other ways to add this customization?

Version 68 is still quite an old version.

You could try an addon that only alters the actual icons. This one works with 78* - so not sure if it works with 68* https://addons.thunderbird.net/en-US/thunderbird/addon/phoenity-icons/?src=ss

Please note: There are significant changes in all the major versions after 60. This info explains the changes in version 68* https://support.mozilla.org/en-US/kb/dedicated-profile-thunderbird-installation

I would advise that you perform a backup before updating/download install 78* just in case you need it. It is no longer as simple to revert to a previous version as some files will see a change in format.

Info: Version 78* will see a change in the Folder Pane icons and in the Write window plus more. https://support.mozilla.org/en-US/kb/new-thunderbird-78
