I understand that Verizon will cut off my email accounts in 30 days, so I will need to change my email settings somehow from @verizon.net to @nycap.rr.com, how? What happens to all my old emails ?

After the email accounts are cut of they will no longer be accessible. You will need to find a new email provider and then arrange a email migration. Thexyz will do a full remote migration of all existing email for $9.95 when you sign up with then - https://www.thexyz.com/email-migration/
