I'm getting anything from 30 to 50 emails every day offering Viagra, Cialis, Levitra, or just 'meds'. I don't know how they started and each one has a different source. I've added filters but they're not working. I need to block them so that they're never even downloaded. How, please?

Doesn't your email provider offer spam filtering? If you don't even want to download a single spam message, you'll need to block them on the server. Thunderbird isn't involved in that case.
