What is the time shown on incoming email? Is it time of sending or time of arrival at my inbox/ISP server?

I know that if I compose a test email to myself, whilst working off-line, and then send it some time later when it arrives back with me the time shown is the time it went into my outbox not the time it was actually sent. I would like to know what the time on an incoming email from a third party represents. Is it the time when typed/put in the sender's outbox; the time of actual sending; the time of arrival at my ISP server or other time? I would like to know because I am trying to sort out a dispute about the times shown on a couple of emails.

I think you need to spend some time in the headers of an email.

The time is created when the composer creates the mail. If you want the dates and times of things like arrival at various hops on the transmission the headers have that information.

Ctrl+U will show the message source.
