I click on my plug in update, it says I need to update java I update java, but when I return to plugin it still says I need to update. I have updated this several times, and get the same result, what am I doing wrong? I know I have the right version. I am running Windows 8.1 64 bit.

Unfortunately, the plugin checker will always recommend the very latest version available even when Oracle is recommending that regular (non-developer) users stick with Java SE 7 for now. For the time being, you'll need to rely on the Java updater (this is constantly running in the background unless you disabled it) until Oracle is comfortable putting Java SE 8 on java.com and then everything will line up again.

Oracle has released the Java 8 version and the Mozilla plugin check page recognizes this Java version as up-to-date and signals the 7U51 Java version as outdated.
As Java 7U51 is still secure (i.e. no known security vulnerabilities) there is no need to update to Java 8.
Note that Java 8 isn't supported for Windows XP.
