Although fonts are displayed in the drop-down selection list, WHEN they are selected, the resultant text is a substitute for fonts that are NOT installed.

The best examples are using Wingdings, Wingdings 2, Wingdings 3, Apple Color Emojis, etc. where, instead of the symbols, normal text is displayed when typing.

Those are not web safe fonts. They are proprietary to particular organizations such as Microsoft or Apple, and there is absolutely no certainty that your correspondents will have them installed. Don't use them in email or Web page design.
