Quit was removed from the menu because of a change in Google's user interface standards. I think now you are supposed to quit by calling up the recent applications list and swiping Firefox off the list (as you might do with other apps).

If you prefer, there is -- surprise! -- an add-on to restore the Quit button: https://addons.mozilla.org/android/addon/quitnow/
