Hopefully someone can help, I'd like to extract all the email addresses from within my hotmail. I've installed Thunderbird and connected and wondering how I would go about pulling the emails and saving it to a list.

What are you after? An address book stored at the Hotmail website? Or the means to build an address book from stored messages?

For the first, go to the Hotmail website, login to your email account there an and look for options to export your addresses. A CSV ("comma separated values") file is a common offering and can be imported into Thunderbird's Address Book.

For the second, I can recommend an addon that searches all the messages in a folder and extracts email addresses to an address book.
