Why do intended recipients turn red if they are not already in the address book?

When I select "Write" and start to type an intended recipient in the "To" box it turns red if the recipient is not already in my address book. I assume that this means I cannot send an email to anybody not already in my address book.

No it means they are not in your address book. Did you bother trying to send the message? If it is a legitimate email address it will work just fine.
