Why has Thunderbird inserted all the useless text into the emails?

When I forward or receive an email the recipient has to scroll a complete page before the actual email shows, because of all the superfluous text that you have recently inserted.

I think you are talking about full headers. The full headers are always there in emails, but you can choose to view the full headers or only the basic normal headers.

Try this: View > Headers > select 'Normal'
