I have a lot of friends with Apple units, and do not need Chinese or other foreign text encoding at this time.

How can I change text encoding to Western for all messages so their messages are not filled with spurious characters?

The setting is under Tools/Options/Display/Formatting/Fonts & Colors/Advanced/Text Encoding, but it's usually recommended to use Unicode UTF-8. But if you're sending through a Yahoo-type server and your recipients see spurious characters, e.g. ??, you have to change a preference in Config. editor:
