I'm running Thunderbird V24.6.0 with an IMAP email account hosted by "myhosting.com". Settings are Synchronization & Storage set with "Keep messages for this account on this computer", "Synchronize all messages locally regardless of age", and "Don't delete any messages". But any email in my trash that is over 7 days old is disappearing.

There may be different retention settings on the server. Check with your email provider.

I figured out that I hit max capacity on my email account. So the provider was deleting "Trash". So I moved a bunch of my sent items to a local folder to free up space.

Is there a way to automatically move sent items older than 90 days (example) to local folder?

Typically you'd get a warning message from your email provider when you reach your quota.

I don't know of a way to automatically move messages based on age.

You could try creating a filter that uses the rule Age in Days + is greater than + 90, with the Action 'Move Message To' (choose folder), but to have it act on the Sent folder, this add-on would be needed:
