Because it takes more than 2 minutes to update the forum list?
Could you be a lot more specific in your question? For example:
- I want to move the tab bar below the address bar
- There are some bookmarks on the Bookmarks Toolbar that are just in my way and I want to remove them
- I would prefer to use a different search engine as my default
That will be helpful in getting a solution.
Also, support forum volunteers didn't make the user interface or feature decisions you may find annoying, so let's just get to point and see whether we can help.
There are so many useless trinkets that have been made permanent in Firefox it is impossible to find a starting point. But lets put this one out there.
I like old versions better than new versions, 33 for instance. But the system FORCES ME to use 40. I don't like 40. I hate 40. Why should some hot shot force me to use it? Why?
There is no single question like you want. This is the issue - configuration. USER configuration. There ain't any to speak of. One single issue? Configuration!!!! Let me configure my own Firefox. That used to be possible, but pre canned configurations are locked in now and never really fit my needs. Who decided I should not be able to configure my own Firefox?

Regarding trinkets, have you already exhausted the possibilities of the Customize feature to remove unwanted icons? This article describes that feature in more detail: Customize Firefox controls, buttons and toolbars.
I am aware of one thing that can't be removed using Customize, and that is the reader mode icon that appears toward the right end of the address bar when a page can be reformatted to a simpler layout. If you do not want to see that icon, you need to change a setting in about config (please don't remove your entire address bar off the toolbar). Let me know if that one bothers you.
Regarding updates, software industry security best practices call for automatically updating software to address security vulnerabilities. Firefox includes feature updates in the same releases. I know that some users, particularly corporate IT departments, would prefer that feature and security updates be separated, and to address that concern, Mozilla has developed the Extended Support Release, also known as ESR. You can read about that here to see whether it might be more suited to you: http://www.mozilla.org/firefox/organizations/.
