In the main window, there is a way to show only the messages of a sender?

I'm wondering if there is a short-cut to click on an email an display (filter?) only the emails, in the same folder, involving the selected sender/receiver. It is an operation I perform so often and it would be way faster than using the "quick filter" search field.

Have a look at the Expression Search/GMail UI add-on. It has a ctrl+shift+right-click action to filter on the selected message sender or subject.

'Menu icon' > 'Find' > 'Search Messages'

Select to search for messages on the account select : 'Search subfolders' select 'Match all of the following' 'From, To, cc or Bcc' 'contains' type in email address click on Search.

You also have the option to save the search results as a folder.

Thank you for your suggestion, but actually this is way slower than simply going in the quick search and typing the name of the contact. My point was to simply click on one email and with one single action (say right click -> show only this contact) only display messages involving the involved contact/email address.
