Can anyone explain why this might have started happening and how I can prevent it?

In the main Thunderbird window, open its menu (that means the traditional menu across the top; press the alt key if you can't see this menu).

Go to View|Headers. I think yours is set to All; change it to Normal.

Whilst this menu item says "view" it also applies to what is placed into a reply or forward, and what is printed.
