Thunderbird used to ask me for my password on incoming emails but this has now disappeared and mail is automatically downloaded when I open Thunderbird. How do I re-instate this? I have version 91.10.0 on a Mac and have a POP3 account. I am still asked to enter a password for sending mail and would like to keep this feature.

I'm not familiar with the menu structure on Macs, but you need to get to preferences>privacy&security to the passwords section. Click the button to show passwords and then right-click the account and select 'edit password' and then delete it. That will cause TB to prompt for password.
