my hardware is very outdated already and i wanna try if my firefox runs better without any hardware acceleration like running fully on software.

i don't think that just simply disabling the hardware acceleration in the settings disables the entire hardware acceleration because there are way more about:config preferences which are related to hardware acceleration.

Disabling hardware acceleration works for everything except WebGL. You can disable WebGL by changing webgl.disabled to true in about:config.

and what about "gfx.canvas.accelerated"?

gfx.canvas.accelerated is a subset of the main hardware acceleration setting, you can see it being disabled in about:support:
