Solución elegida

Language packs affect the menus and other interface items, but not spell checking. Install dictionaries from here and set the options in Tools/Options/Composition/Spelling.

For example:

https://addons.thunderbird.net/en-US/thunderbird/addon/british-english-dictionary-2/

https://addons.thunderbird.net/en-US/thunderbird/addon/dictionnaire-fran%C3%A7ais1/

Right-click the Download Now button, Save Link As.., then in TB Tools/Add-ons/Dictionaries, click the gear icon, Install add-on from file..., select the downloaded xpi file.
