How do I get back my folders and e-mails that were stored, they disappeard when yousent the message last week to pick another carrier

I had several e-mails that I was keeping and several folders that I had put e-mails in and they disappeared when someone sent me a e-mail to change my e-mail carrier.

No one is going to send you an email to change providers. If you added a new provider and deleted the old account then yes the old folders are removed. You removed the account. Follow this article to see if you can recover the old account.
