How do I set the language to English (UK) NOT English (USA)
The spell checker is constantly using English (USA) and not English (UK). No matter what I set it to it reverts. I suspect every time there is an update it does this and it is extremely annoying for anyone living this side of the pond (In the UK).
PLEASE can we have English (UK) by default. I notice when you add it to the list of languages in settings the USA version cannot be deleted.

My suggestion is to download the British version and install it. I think that should resolve your issue.
I am using a mac with Catalina. Tbird 91.8.0. I have downloaded and installed the English language pack but cannot configure it. The only option is to remove it. It seems useless. I will attempt to find some workaround, but I'm surprised this surely common requirement has not already been met in a more robust fashion.

I have the same question, but for *Canadian English*. And before someone says download the dictionary... I already have the Canadian English dictionary, and I know I can change the spellchecker in an individual email. That's not what I want. I want the *default* to be Canadian English. So I don't have to switch from US for every single email I compose.
It is important to install the language version of Thunderbird which you want to be as default.
Senario: If you want 'English British' to be the default:
Have you installed the English British version of Thunderbird ? https://www.thunderbird.net/en-US/thunderbird/all/#E If no then uninstall Thunderbird and download and reinstall the version you want as default.
In Menu app > Preferences >General -Language section - set language to be used in general UI - English (United Kingdom). In Menu app > Preferences > Composition - Spelling is where you set default composing dictionary language - English (United Kingdom). Then, if you want to use other 'Dictionaries' for other languages when you are composing email, download the specific 'dictionary' - not language pack. When composing a new Write message - You can then select to spellcheck a particular email by selecting other language from the 'Spelling' dropdown option.
