I'm running on the beta channel on one machine and release channel on another. The release numbers are far different. Does that mean that what I'm seeing in beta is years away from release?

That is just how they do it. Some numbers are used for test versions the end user never sees. It is no big deal. This page lists all version numbers if you are that interested. https://archive.mozilla.org/pub/thunderbird/releases/

TB releases approximately follow the Firefox ESR release schedule:

https://wiki.mozilla.org/Release_Management/Calendar

That means the next TB major release will be v. 60, sometime in mid-May 2018. There may be a minor release, TB 52.8, in the meantime.
