In the German version how do I place into an address book the addresses of mails already received and how do I automate the process for all future emails?

It will not automate it, but Thunderbird's default process is to capture the emails of outgoing mail to the collected address book. This is probably better as your address book only gets mail addresses from those that get a reply.
