After installing the latest Thunderbird update on the iMac every time I open the Thunderbird App it keeps asking me to create my email accounts. This happens each time inspite of creating them multiple times so far. Please help!

You likely failed to finish the application installation process. Thunderbird must be run from the Mac Applications folder. See https://support.mozilla.org/kb/installing-thunderbird-on-mac/
