On my iPad, choosing "all mailboxes" enables me to see e-mail from all of my accounts -- 4 gmails and 2 aols -- in one stream, sorted by date but not by account. I'm looking for a Windows mail app that has this feature. Is Thunderbird it?

Yes, Thunderbird as that ability, called 'unified folders', and can be turned on or off with a single click.
