Whenever I forward a message in Thunderbird, the forwarded test begins with a table containing the headers from the forwarded message. It would seem you have a setting to show all the headers.

Menu app icon > View > Headers > select 'Normal'

Unless the recipients know the original sender, it is considered respectful to delete the table because you are forwarding personal data which is not your own, but it sounds like you are already doing that when necessary.
