We push out Firefox through MDT. Is there a way to have automatic updates turned on FROM THE INSTALLER, editing the installer or something, or are automatic updates already turned on and we don't need to do anything?

In Firefox auto update is turned on in all installer packages.

You can use an autoconfig file to use lockPref() to disable updates or use policies.
