Have Thunderbird setup as my default mail client but when clicking "Send to" on a file, an error comes up saying "...Outlook.pst cannot be found"

As subject suggests. I use Thunderbird as my mail client, have it selected as my default in Windows10 settings. Right clicking on any file, selecting "Send To", clicking "Mail Recipient" (to open a Thunderbird email window), that warning comes up, suggesting it's looking for an Outlook file.

Why is it wanting to open Outlook when 1. I don't have it installed & 2. Thunderbird is set as default email client

This is a Windows issue. I suggest you review Default Apps in windows, as there is more than one setting for email clients.

That's clear but being that you have an email client, I wasn't sure if this was a common situation that's had numerous support requests with a common answer (aside from obviously changing the main default app under Settings). You were my first support to go for being that dealing with Microsoft support is like pulling teeth

When MAPI functions like Send to don't work properly, they can sometimes be fixed by running the full TB installer in a particular way, to ensure TB is the default mail client:
